Apache / PHP Upgrade Options - Suggestions

I just acquired a new dedicated server from my hosting company that I'm going to use to move my current site on to. Since it's brand new and I have the option of doing all the upgrades myself without affecting my currently live site, I'd like to take care of all of that before migrating my site.

I'm not going to enable eaccelerator or FrontPage, but will try and install xcache or MemCache (MemCache is an option below) after I get everything else upgraded.

Below are the options available for upgrading Apache and PHP via WHM/cPanel. Some of them are checked by default, but I'd like to know what I should check/uncheck in the build?
