Changing CHARSET
 

Is it possible to change the CHARSET of the HTML doctype to utf-8 instead of iso-8859-1?

I was wondering if you could change it globally. When I look into the headinclude template on the skins it gives me the following phrase: $stylevar[charset]

So it must be possible to edit, just wondered how and where i can..
